Okay, so I must confess, this post has no real highlighted ingredient or technique.
It's really about a working mom with only a few minutes to spare between kid taxi service
and domestic diva duties ;-)
I really wanted a
flavorful meal that satisfies in this winter weather.
My solution: Soup...fast!
I took some help from the grocery store, and added some fresh ingredients~
This soup has it all, spice, smokiness and warmth.
Ahhhh just what the doctor ordered!
Fire Roasted Tomato & Spanish Chorizo Soup

Fire Roasted Tomato & Spanish Chorizo Soup
4 Cups of Chicken Stock
2 Medium Potatoes (diced)
1 Medium Onion (diced)
1 Cup Frozen Corn
1 Cup Frozen Carrots (diced)
1 Cup Spanish Chorizo (diced)
1 Can Fire Roasted Tomatoes
1/4 Cup Cilantro (chopped)
3 Banana Peppers
Chives for garnish
Salt & Pepper to taste
Directions:
Place the spanish chorizo in a soup pot, cook on medium heat for about 15 minutes. Use that time to chop the rest of your ingredients. Once chorizo is cooked through add he remainder of your ingredients and simmer for about 20 minutes until the potatoes are cooked through.
Garnish with cilantro and chives and enjoy!

I know, but why go through all the work when u can get some help~
Everyone can use a bit of help once in a while,
and believe me, this week I sure needed it ;-)

I just L-O-V-E cilantro, it's just so fresh, vibrant and adds great flavor to most every dish.
Pour in the stock...and simmer*
