Creamy Cheddar & Pumpkin Soup w/Bacon & Homemade Croutons...

Okay, so just a warning, my kids went to our friends pumpkin farm just before Halloween, and well you'd think they wen to a candy store...picking big pumpkins and small ones and of course an extra large one. So that being said, don't be surprised if you see way too many pumpkin recipes in the days to come. 
I have to do something with them!

So this go around I decided to make a soup, a warm your belly & your soul soup.  With bacon and cheddar - I mean what can be better right, bacon makes EVERYTHING better! - just don't tell my husband ;-)
This soup has the spirit of a chowder and the essence of creamed soup, I guess you can call it, the best of both worlds.  I hope you try it, enjoy it...and of course... spread the love*

Creamy Cheddar Pumpkin Soup w/ Bacon & Homemade Croutons


3 Cups of  raw pumpkin
1 Medium onion (chopped)
2 Garlic Cloves (grated)
1 Tbs Salt
1 Tsp Ground chipotle powder
1 Tbs Sage & Oregano
1 Tsp Pepper
2 Cups milk
1 Cup Aged Cheddar (grated)
1 Cup cooked bacon
2 Tbs Olive oil


Sauté  onion on low with minced or grated garlic. Add herbs & salt, cook low and slow, until caramelized. Add the pumpkin and cover - let cook for 45 minutes or until pumpkin is cooked through. Add milk, heat through.  Puree. Add the remaining ingredients (leave about 1/4 cup of each bacon and cheddar for garnish) and simmer until all the flavors have developed, approximately 20 min.  Top with homemade croutons and garnish with cheddar and bacon.  Yuuuuum...quite fulfilling ;-)


& this is only 1/4 of the pumpkin!

Quick and easy 
you could use your blender as well

Aged cheddar...

oh, be sure to remove the cloth...not a good texture in your creamy soup.
