Simple. Flavorful. Fast.

There are days when spending time in the kitchen is a means to relax, unwind and find my inner spirit. Then there are the days like today- no fridge, crazy mess, a million things to do & and dinner needs to be thoughtless and quick*



One of my favorite go to staple ingredients is Soyrizo - yes, you heard me right, Soy. Now, calm down devout traditional chorizo lovers, I know that Dona Lola makes the best traditional chorizo this side of the Rio Grand. I am not knocking it AT ALL...but you see, I have a husband who won't eat pork, and well, this is the best alternative. Plus, it's guilt free!

Well, you get the picture right?  

You can find Soyrizo mostly in the vegetarian or specialty foods section of your grocery store.  The same place where you find wonton wrappers, and tofu. On occassion you will find it however, right next to the traditional chorizo in the meat case. It's packaged the same, in a casing with the same colors and spices but with about half the fat~

And well, if it taste fabulous ~ then what are you waiting for....give it a try!

Soyrizo, Spinach & Split Pea Soup 
w/ Grilled Brie Sandwiches

Soup:
2 Tbs Oil (Canola, Vegetable)
6 oz Soyrizo
1 Medium Onion (diced)
1 Clove of Garlic (minced)
1 Cup Split Peas
2 Hand Fulls of Spinach (yes, I can say "Hand Fulls")
1/2 tsp Cumin
1/2 tsp Chili Pepper Flakes
1 Tbs Chicken Bouillon 
4 Cups Chicken Stock
Salt & Pepper to Taste

Directions:
In a saucepan combine first 4 ingredients and cook on medium heat until unions are cooked through. 
Add the spinach and mix until wilted. 
Add the remaining ingredients and simmer for approx. 25 minutes or until peas are cooked but still al dente. They will continue to cook as you remove them from the heat.  

Serve with a warm melted grilled brie sandwich...
Just take sliced brie and combine it with your favorite crusty bread, grill with butter & enjoy!

This combination is flavorful, bold and most satisfying!
